Detox Salad! Journal Entry 3 day 1

Soooo I must say that a giant bowl of bitter leaves, I mean lettuce with apple cider vinegar for a dressing didn’t really appeal to me. I was thinking “I better get ready to have the grumpy face, as I eat lunch.” To my surprise (I know I keep saying that) I really enjoyed it. Once I got over how tough the lettuce leaves were, not soft and pliable like kale or spinach leaves, I was thoroughly satisfied, I ate every last bit! 9 days to go, I may try some different salads but this is the one I will eat most of as it has super detox ingredients and that my friend is what it’s all about!

Lunch time detox salad!

1 bunch of bitter greens such as arugula, dandelion greens, endive etc. ) I mixed all 3 arugula being prominent

1 avocado

1/2 cucumber

handful of fresh parsley and cilantro

1 teaspoon of apple cider vinegar

1 tablespoon of extra virgin olive oil

juice of 1/2 lemon

2-4 mini portobello mushrooms sliced

of course you know the last three are you salad dressing! You know what to do, mix together add it to you salad and enjoy!
