This vegan dessert is amazing! The chocolate avocado icing is not only a raw vegan dessert but also a sugar-free vegan treat! The chocolate cupcakes are made with spelt flour just perfect for this healthy vegan dessert!
Chocolate Avocado Icing:
3 ripened Avocado
3/4 Â cup agave
3/4 Â cup cocoa powder
3 tbs coconut oil
1 tsp vanilla
a dash of salt
Chocolate Cupcakes:
1 cup coconut milk
½ cup olive oil
1 ½ tsp apple cider vinegar
1 tsp vanilla flavor
1 ¼ cup spelt flour
½ cup cocoa powder
¾ cup sugar
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt
For the icing
- Cream the avocado together
- Add all of the other ingredients for the icing and blend until well combined
For the cupcakes
- Heat oven to 325 F.
- Add all the dry ingredients and mix well
- Add all the wet ingredients and mix well
- dd the dry and wet ingredients and mix until well combined
- Fill cupcake pan about ¾ way full should make 12 cupcakes
- Bake for 20 -25 min depending on oven
