Oatmeal and egg whites are my typical daily breakfast. I wanted to mix it up a little and to be honest I was missing pancakes! I took my daily favorite and turned them into pancakes! Now these versatile pancakes are my favorite.  I’ve topped them with strawberries and bananas, chocolate chips, walnuts  and the list goes on. They are super quick to make and they taste like pancakes but they are sugar, flour, gluten and cholesterol free!

This particular recipe came about while I was making my pancakes, they were just going to be plain but my daughter Amber was baking some cinnamon apples and it smelled so good and when she took them out of the oven it look delicious! She shared a few slices with me and when I put it all together it reminded me of apple pie, so I had to share. I hope you try these, if you do please let me know what you think!
