I absolutely love veggie burgers! I’ve been a vegetarion since 2001 and I don’t miss meat one bit. I’ve made these burgers for my friends who eat meat and they love them also. If you are looking for a healthy but hearty recipe try this one!

3 cups cooked brown rice
1/2 cup packed oatmeal
1/2 cup canned black beans, rinsed and drained
1/2 cup julienned carrots
1/4 cups diced onions
3 ounces canned beets, drained
1/4 cup diced celery
1/4 cup diced red bell peppers
1/4 cup button mushrooms, cut in 1/4-inch slices
2 tablespoons chopped parsley
2 tablespoons sweet soy sauce
1 tablespoon chopped garlic
1 tablespoon Dijon mustard
1 tablespoon kosher salt
1 teaspoon chili powder
1 teaspoon dry, ground chipotle peppers
1 tablespoon of liquid smoke
Place all ingredients in large plastic mixing bowl and mix well. Pulse in a food processor until texture is mixed thoroughly.

Portion into 8-ounce patties, then press through a burger press with a piece of wax paper underneath and on top of each patty. Place burgers on plastic serving platter and refrigerate overnight. These keeps the burgers from falling apart on the grill. (Patties must never get above 40 degrees F or they will fall apart.)

Makes 4 servings I like to make 8 burgers instead they are huge!  It’s up to you!  If you want to make 4 use 1 cup to form patties and ½ cup for 8.
