I used to love mashed potatoes! Anything starchy actually, I really didn’t think I could go without having them for any length of time! I found out about creamed cauliflower as a substitute for mashed potatoes and after my first try I was hoooooked!!! I mean I don’t even miss mashed potatoes, I haven’t had them in about a year! So If you were like me and you just got to have some potatoes I’m telling you give this a try it’s super quick and super healthy!! Even if you just want another way to cook your cauliflower try this one.

Step 1. Steam them until they are firm not soft or they will be too watery.

Step 2. Put them in the blender, food processor or I use my vita mix!

Step 3. Add your seasonings here I put salt, pepper (can use white pepper) cheddar cheese, and I cant believe its not butter.  Put what you like, roasted garlic or sour cream and chives etc. blend until your desired consistency.  I use my tamper.
