OMG this Keto Vegan Thai peanut tofu with the coconut rice is my favorite!!!! the baked tofu comes out crispy and the cauliflower rice is excellent when you cook it right! If you love peanut butter honey you are going to love this dish! My husband who is anti-keto vegan even loves this dish, he loves the sauce which I use to make a host of other things including a dipping sauce for vegan spring rolls.

Ingredients:

2 8oz Packages of firm or extra firm tofu (I like extra firm)

1 Head of Cauliflower

Thai Peanut Sauce

1/2 cup no added sugar peanut butter

1 can of coconut milk

½ cup monk fruit sweetener (for non keto use agave nectar)

½ cup of fresh lime or lemon juice

¼ cup tamari

¼ cup minced garlic or 2-4 fresh cloves

1-1.5 tsp Red pepper flakes depending on how spicy if you want if very mild use ½ tsp. (I don’t like spicy food and I like 1 tsp)

P.S this sauce makes double amount needed for the tofu so you can save some or just make a double portion of tofu!
