I love portabello mushrooms, guacamole, vegan cheese, vegan sour cream and with these keto vegan mushroom fajitas I get to make an easy, quick dish that encompasses all these ingredients!


2-4 Portobello mushroom caps

1-2 bell peppers

1 medium onion

1 Tbsp. of chili powder

1 tsp of cumin

1-2 tsp of garlic powder

Salt and pepper to taste

Cut onions, peppers and mushrooms into strips. We will cook the mushrooms separate from the onion and bell pepper.  Heat a little avocado oil in a pan and sauté the mushrooms. When they start to release their moisture and reduce in size add the seasonings. 

In a separate pan heat oil and add the onion and bell pepper, add the seasonings, the amount listed is what you will need for each the mushrooms and then the same amount for the onion and bell pepper. You don’t want to over cook the onion and bell pepper they should still be firm.

Assemble your wraps with all the fixins and enjoy!
