I used to love tuna. I used to make tuna melts, tuna casserole, tuna cakes, etc. After a while I just stopped liking tuna maybe I got burned out. I think I was truly just meant to be a vegan and I’ve been fighting it. I’ve been a vegetarian since 2001 which wasn’t difficult seeing I didn’t really care for meat in the first place. Now cheese, that was a different story, this is why I probably didn’t come on over the the vegan world.

For the past several months I haven’t really had a taste for cheese. I’ve been really satisfied with eating vegan cheese whenever the cheese mood hits me.  Since my daughter recently became a vegan (I mean a real one, no honey or nothing) I’ve been experimenting with more vegan dishes and having fun! So here is my vegan take on a tuna melt! Just in case you don’t know what tempeh is, really quickly it’s fermented soy beans. tempeh is less processed than tofu so it’s healthier. It’s very high in protein, very versatile and tastes great!
