This is my all time favorite soup! It’s creamy, cheesy, easy and low carb! It just happens to be keto vegan! I like to make this soup in bulk and freeze it! It’s my guilt free comfort food! I’ve made a few vegan broccoli cheese soups and I keep coming back to this one!
Ingredients:
3-4 cups broccoli florets
2 cloves minced garlic
½ cup chopped onion
2 stalks of celery finely chopped
2 Cups almond milk (or non-dairy milk of choice)
1 can (15 oz.) coconut milk
¼ cup nutritional yeast
½ cup arrowroot powder or cornstarch
1 Tbsp. mustard powder or liquid
2 tsp. chili powder
1 ½ tsp paprika
1 ½ tsp salt
½ tsp pepper
